Chicken and Rice Soup

Try this simple chicken and rice soup….perfect for colder weather or when you’re feeling under the weather!

Chicken & Rice Soup

1-2 cups carrots, chopped
1-2 cups celery, chopped
1 medium onion, chopped
4 cups homemade chicken bone broth
1 1/2 cups water (or more chicken broth)
2/3 cup uncooked rice
1-2 cups chicken, cooked and diced
Salt, Pepper, & Parsley

Place carrots, celery, onion, broth, water, and rice in a large pot.
Cover and bring to a boil.
Turn down the heat and simmer until vegetables are tender and rice is cooked (~20 minutes).
Add in cooked chicken and salt, pepper, and parsley to taste.
Simmer another 5-8 minutes to make sure chicken gets heated through.

Note: You can use as much or as little chicken and vegetables
depending on how hearty you like it, hence the range of measurements.

This also works well to throw in the crock-pot!
