Chicken with Lemon-Garlic Potatoes & Green Beans
6 T coconut or olive oil
2 lemons (1 sliced, 1 juiced)
4 cloves garlic, minced
1 tsp salt
½ tsp black pepper
¾ lb green beans
8 small red potatoes, quartered
4 chicken breasts
Preheat oven to 450 degrees. Grease a 13×9 inch baking dish.
Arrange lemon slices in single layer on bottom of pan (optional).
In large bowl combine coconut or olive oil, lemon juice, garlic, salt, and pepper.
Add beans, potatoes, and chicken and toss to coat.
Pour into baking dish and spread out evenly. Bake for about 50 minutes.
