Potato & Egg Skillet


If you can’t tell, I really enjoy simple skillet meals. What’s not to love about fewer dishes!? 🙂

This one is especially great for a hearty breakfast, but I’ve also made it for dinner plenty of times.

Ingredients
  1. 1 T coconut oil
  2. 1 lb potatoes (~3), cubed
  3. 1 onion, chopped
  4. 1 can (15 oz) Italian diced tomatoes
  5. 8 eggs, beaten
  6. 1/2 tsp dried basil
  7. 1 cup cheese, shredded (optional)
Instructions
  1. Heat oil in large skillet.
  2. Add potatoes and onions.
  3. Cook until vegetables are tender (10-15 minutes).
  4. Stir in tomatoes (undrained).
  5. Beat eggs and mix in basil.
  6. Pour egg mixture over vegetables. Do not stir.
  7. Cover, cook 12-14 minutes or until eggs are set.
  8. Top with cheese and cook until cheese is melted.
Notes
  1. Can add 1/2 lb of cooked hamburger when you add tomatoes.
