Easy Crock Pot Refried Beans and Party Bean Dip


Need a dish for your Superbowl party? How about this Party Bean Dip (below) that is both flavorful and filling so you don’t overindulge on on all the yummy snacks. 🙂

You can buy refried beans or easily make your own. Too difficult and time consuming you say? Not this recipe! Just throw them in the crock pot for the day (or night)! You might as well make a large batch and freeze some for later.

Easy Crock Pot Refried Beans

1 onion, peeled and chopped
2 cups dry pinto beans, rinsed (soaked if desired)
1/2 jalapeno or other hot pepper, seeded and chopped
2-3 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
6 cups water

Combine all ingredients in slow cooker.
Cook on low for 8 hours or overnight or on high for 4-5 hours.
Mash beans with a potato masher.

 

Party Bean Dip

2 1/2 cups refried beans
1 tsp paprika
1 T lime juice
3/4 tsp cumin
1 1/2 cups salsa
1/2 cup green onions, chopped
1/4-1/2 cup cilantro, chopped
1 cup cheese, shredded
Sour cream

Preheat oven to 350 degrees. Mix together beans, paprika, lime juice, and cumin. Spread onto a baking sheet (pizza sheet works well). Spread salsa over beans. Sprinkle with onions, cilantro, and cheese.

Bake for about 20 minutes or until cheese is melted and bubbly.
Serve with sour cream and extra salsa.
This would also work well in whole wheat tortillas as a burrito.
