Shredded Veggie Salad


Sometimes family gatherings, holidays, and potlucks are full of carb-heavy and sugar laden foods.
Here’s a tasty salad you can take for a slightly lighter fare!
It’s gluten free, dairy free, and loaded with nutrients that will make you feel great!
Plus, it’s really pretty. 🙂

Feel free to mix and match whatever veggies you have on hand.
I think some green or red cabbage, peppers, or snap peas would go great!

Shredded Veggie Salad

1/2 head of cauliflower
1 head of broccoli (~ same amount as cauliflower)
6-7 large carrots or about 15 baby carrots
1/2 bunch of kale or spinach
1/2 cup sunflower seeds
1 cup oranges, chopped into small bites
1-2 pomegranates, seeded
2 lemons, juiced
2-4 T honey
salt & pepper

In small batches, shred cauliflower, broccoli, carrots, and kale in your food processor.
(You can also chop by hand, but it goes much quicker with a food processor.)

Place shredded veggies into a large bowl.
Add sunflower seeds, oranges, and pomegranate seeds and mix.
In another small bowl mix lemon juice and honey. Sprinkle with salt and pepper.
Pour over salad and mix well.

Notes: Mix and match veggies with whatever is available.
This is also good with a balsamic dressing instead of the lemon juice and honey.
