  1. 1 spaghetti squash
  2. 5 slices bacon, diced
  3. 2-3 cloves garlic, minced
  4. 1 onion, diced
  5. 1 T parsley
  6. 2 large eggs
  7. 1/4 tsp black pepper
  8. 1 tsp salt
  9. 1/2 cup shaved Parmesan cheese
  1. Preheat oven to 400 degrees F.
  2. Cut spaghetti squash in half, scoop out the seeds, and place cut side down on a cookie sheet.
  3. Bake for 30-40 minutes or until fork is inserted easily.
  4. While spaghetti squash is cooking, cook bacon in a large skillet over medium heat.
  5. Add garlic and onions and cook until translucent.
  6. In a small bowl whisk eggs, parsley, salt, pepper, and cheese together. Set aside.
  7. When spaghetti squash is cooked, scrape squash out of skins and place in skillet with bacon mixture.
  8. Add the egg mixture and stir until well coated. The heat from the spaghetti squash will cook the eggs.
  1. Can add more veggies such as cooked broccoli or carrots.
  2. Can add chicken for a heartier meal.
