This past week I went on a trip with my extended family. It’s always fun getting to catch up on life and spend time together! Since we stayed in some condos, each family took turns cooking the evening meal. It’s so nice not to have to eat out every meal! Here is one of the sides we made for our meal–minus the corn since I forgot it. 🙂
1 tsp coconut oil or butter
1/4 cup chopped onion
2 T. jalapeno pepper, diced (optional)
1/4 cup frozen corn, thawed
1/2 tsp cumin
1 can (8 oz) tomato sauce (Mexican style if you can find it)
2 cups cooked brown rice
1/4 cup cilantro, chopped
1 T. lime juice
Salt and pepper to taste
Cook rice according to package (~1 cup rice to 2 cups water).
Heat oil in medium saucepan. Add onion, hot pepper, corn, and cumin. Sauté for 2 minutes. Add tomato sauce, reduce heat to low, and simmer for 5 minutes. Stir in rice, cilantro, and lime juice. Season to taste with salt and pepper.
