White Chicken Chili


This White Chicken Chili is a simple weekday meal that can be thrown together in the crock pot in about 10 minutes! It is also naturally gluten and dairy free for those of you who have specific diet limitations. Soups like this one are a great way to include bone broth in your diet which is full of minerals and amino acids that help maintain or improve your intestinal lining.

 

White Chicken Chili

 

White Chicken Chili

1/2 lb. dried Great Northern beans (2 cans works too)
1 lb. skinless, boneless chicken breast
1 small onion, chopped
3 cups chicken broth
1 tomato, chopped (I used 1 can diced tomatoes)
1 tsp cumin
1/2 tsp oregano
1/2 tsp garlic powder
1/4 cup chopped fresh cilantro (optional)

Place beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse beans. (Can also use canned beans)

Place beans, chicken, onion, chicken broth, tomato, cumin, oregano, and garlic powder in a crock pot.
Cook on high for 4 hours or on low for 8 hours. Shred chicken breasts with a fork.

Top with cilantro before serving.

You can also add 1 T. chopped jalapeno pepper or a sprinkle of crushed red pepper if you like extra spice.
