Balsamic Garlic Crusted Pork Loin


Need a good marinade, an easy crock pot dish, or a last minute meal? With easy modifications, this recipe can work for all three! I typically put this in the crock pot, but have also used the sauce as a marinade and pork loin chops on the stove for a last minute meal. This recipe is a keeper — not because I said so, but because family and friends always seem to enjoy it!

 

Balsamic Garlic Crusted Pork Loin

4-5 cloves garlic, minced
2 T. balsamic vinegar
¾ tsp salt
½ tsp pepper
2 T. coconut or olive oil
2 pork loin/tenderloin (1 ¼ lb each) (can use for pork loin chops as well)
Onion slices (optional)

Stir together garlic, vinegar, salt, pepper, and coconut oil. Rub paste over pork loin. (Can marinate if you want).

Place pork loin/tenderloin and onion slices in crock-pot on low for 3-4 hours.

OR

Cook pork loin chops in a skillet (with onions if desired) on medium heat until chops are done.
