Chicken Pesto Pizza

Flatbread
- 1 ¾ c. flour (can use gluten free flour mix if needed)
- 1 tsp. baking powder
- ¾ tsp. salt
- ½ c. water
- 1/3 c. olive oil
For Pizza
- 1/3- ½ c. basil pesto
- 1 c. cooked and diced chicken
- 1 c. cherry tomatoes, halved
- ½ - ¾ c. olives
- ¼ c. feta cheese
- ¼ c. parmesan cheese
Instructions
- Preheat oven to 450° F.
- Whisk together flour, baking powder, and salt.
- Add water and oil and stir into flour with a wooden spoon.
- Mix until a dough forms.
- Knead 4-5 times in the bowl (it will feel a bit oily).
- Roll out into a thin layer on pizza stone/pan.
- Bake for 5-8 minutes or until just starting to brown.
- Spread pesto on partially cooked flatbread.
- Layer with chicken, tomatoes, and olives.
- Sprinkle with cheeses.
- Bake for another 12-15 minutes or until cheese starts to brown and crust looks done.
