Chicken Pesto Pizza

Flatbread
  1. 1 ¾ c. flour (can use gluten free flour mix if needed)
  2. 1 tsp. baking powder
  3. ¾ tsp. salt
  4. ½ c. water
  5. 1/3 c. olive oil
For Pizza
  1. 1/3- ½ c. basil pesto
  2. 1 c. cooked and diced chicken
  3. 1 c. cherry tomatoes, halved
  4. ½ - ¾ c. olives
  5. ¼ c. feta cheese
  6. ¼ c. parmesan cheese
Instructions
  1. Preheat oven to 450° F.
  2. Whisk together flour, baking powder, and salt.
  3. Add water and oil and stir into flour with a wooden spoon.
  4. Mix until a dough forms.
  5. Knead 4-5 times in the bowl (it will feel a bit oily).
  6. Roll out into a thin layer on pizza stone/pan.
  7. Bake for 5-8 minutes or until just starting to brown.
  8. Spread pesto on partially cooked flatbread.
  9. Layer with chicken, tomatoes, and olives.
  10. Sprinkle with cheeses.
  11. Bake for another 12-15 minutes or until cheese starts to brown and crust looks done.
