Ingredients
- 1 lb ground beef (sausage also works well)
- 1 bag dry coleslaw mix (shredded cabbage and carrots)
- 4 cloves garlic, minced
- 1/3 - 1/2 cup soy sauce (low sodium)
- 1 tsp ginger
- Crushed red pepper (optional)
- 2 green onions, sliced
Instructions
- Brown the meat in a large skillet.
- Stir in coleslaw mix, garlic, soy sauce, ginger and crushed red pepper if using.
- Cook until cabbage starts to wilt but is still crunchy (about 5 minutes).
- Top with green onions and serve.
Notes
- Can serve alone or with rice.
- If you use sausage, decrease soy sauce and use low sodium so it isn't too salty.
- Can use ~ 5 cups shredded cabbage and 1-2 cups shredded carrots instead of coleslaw mix.
