Greek Hummus Dip
8-10 oz. classic hummus
3/4 c. plain Greek yogurt
1/4 c. chopped cucumber
1/4 c. chopped roasted red peppers
1/4 c. chopped kalamata olives
2 T. chopped red onion (soaked optional)
2 tsp. olive oil
1/8 tsp salt
1/4 tsp pepper
Fresh veggies, pita bread/chips for dipping
Chop red onions and soak in cold water until ready to use. (Helps take the bite out)
Spread hummus on a serving tray in a thin layer.
Spread Greek yogurt over hummus.
Mix together the cucumber, red peppers, olives, onion, olive oil, a sprinkle of parsley, salt, and pepper together.
Spread over yogurt.
Sprinkle with feta cheese.
Keeps in the fridge for 24-48 hours.
