I’ll admit, I was a little skeptical the first time I tried these, but I was pleasantly surprised at how much I like them. I like them plain, with a sour cream-type sauce, with ketchup, or crumbled over salad! Note: They are a little bit more tedious than some recipes.
Quinoa Burger
2 c. cooked quinoa
¾ c. shredded cheese
½ c. cottage cheese
1-2 medium carrots, grated or 1 c. grated zucchini
3 eggs
2 green onions, chopped
¼ tsp pepper
¼ tsp cumin
1/8 tsp salt
1/8 tsp garlic powder
Coconut oil for cooking
Mix all ingredients together until well combined. Heat oil in frying pan on medium-low heat.
Scoop ¼ cup of mixture as a burger into pan. (These are difficult to make if made bigger).
Cook on medium-low heat until burger seems set and browned well on the bottom. Flip burgers and cook until second side is browned.

Serve over salad, with sour cream/cream sauce, or ketchup.
