Sweet Potato and Kale Hash

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, chopped
- 1 red bell pepper, chopped (optional)
- 2 - 3 cups kale
- 1 tsp cumin
- 1 tsp paprika
- Pinch red pepper flakes
- Salt and Pepper
- Coconut or Olive Oil for pan
Instructions
- Heat oil in a large skillet over medium heat. Once hot, add in the sweet potatoes and cook for 5-8 minutes.
- Add onion, red pepper, cumin, paprika, red pepper flakes, and season generously with salt and pepper.
- Cook mixture, stirring occasionally, until sweet potatoes are cooked through and tender.
- While mixture is cooking, wash and remove stems from kale. Tear into pieces.
- Add kale into the skillet approximately during the last 3-5 minutes of cooking.
- Taste the hash and season with additional salt or pepper if needed.
Notes
- I really like this with fried eggs on top for a full meal!
- Can also add browned ground beef or other meat.
