Ingredients
  1. 2 medium sweet potatoes, peeled and diced
  2. 1 small onion, chopped
  3. 1 red bell pepper, chopped (optional)
  4. 2 - 3 cups kale
  5. 1 tsp cumin
  6. 1 tsp paprika
  7. Pinch red pepper flakes
  8. Salt and Pepper
  9. Coconut or Olive Oil for pan
Instructions
  1. Heat oil in a large skillet over medium heat. Once hot, add in the sweet potatoes and cook for 5-8 minutes.
  2. Add onion, red pepper, cumin, paprika, red pepper flakes, and season generously with salt and pepper.
  3. Cook mixture, stirring occasionally, until sweet potatoes are cooked through and tender.
  4. While mixture is cooking, wash and remove stems from kale. Tear into pieces.
  5. Add kale into the skillet approximately during the last 3-5 minutes of cooking.
  6. Taste the hash and season with additional salt or pepper if needed.
Notes
  1. I really like this with fried eggs on top for a full meal!
  2. Can also add browned ground beef or other meat.
