I was pretty skeptical of this recipe before trying it, but was surprised at how much I liked it.
It has become one of my staple one-pot meals!
Works great for most elimination diets.

Turkey, Kale, Carrot Stir-Fry

Ingredients
- 1 T. Olive Oil
- 1 lb. ground turkey
- 1/2 - 1 tsp. salt
- 1/2 tsp. cumin
- 1/2 tsp. dried oregano
- 3-4 green onions, chopped (other onion works too)
- 2 large carrots, coined
- 3 c. sliced kale
Instructions
- Heat oil in large skillet over medium heat.
- Add turkey, salt, cumin, and oregano. Saute for 3-5 minutes, or until turkey is almost cooked.
- Add onions and carrots. Continue to saute 3-5 minutes.
- Add kale and cook a few more minutes until vegetables are tender.
- Add more seasonings as needed.
Notes
- Works great on most elimination diets or for people with multiple food allergies/sensitivities.
